Study Esalq develops fast-food-based tilapia

A survey of the College of Agriculture Luiz de Queiroz (Esalq), University of São Paulo (USP) in Piracicaba, developed a type of tilapia meat to be marketed as "fast food" (fast food).

The meat is mechanically separated from the fish farm grown fish. According to nutritionist Maria Fernanda Calil Angelini, who worked in product development, the goal is to facilitate and increase the consumption of fish, a protein of excellent quality, but that is little consumed in Brazil.

The convenience product, called quenelle (a kind of dumpling), is frozen and comes ready to use, requiring only bake. According to the researcher, the quenelle contains vitamin A and iron in their composition, and last up to 120 days if stored in a freezer.

The researchers plan to continue their studies and are working on the development of other types of frozen. "I still want to improve in order to increase responsiveness through the development of different types of sauces to accompany the dishes prepared with quenelles," said nutritionist.
